Ingredients:

a)     1 lb boneless chicken breast, cut into 1-inch cubes

b)    1 red bell pepper, cut into 1-inch squares

c)     1 yellow bell pepper, cut into 1-inch squares

d)    1 green bell pepper, cut into 1-inch squares

e)     1 large onion, cut into 8 wedges

f)      8 wooden skewers, soaked in water for 30 minutes

g)    Salt and pepper, to taste

h)    2 tablespoons vegetable oil

Marinade:

1)     1/2 cup plain yogurt

2)     2 cloves garlic, minced

3)     1 teaspoon paprika

4)     1 teaspoon cumin

5)     1/2 teaspoon coriander

6)     1/2 teaspoon turmeric

7)     1/2 teaspoon chili powder

8)     1/2 teaspoon dried oregano

9)     1/2 teaspoon dried thyme

10) Salt and pepper, to taste

Instructions:

In a large bowl, whisk together the yogurt, garlic, paprika, cumin, coriander, turmeric, chili powder, oregano, thyme, salt, and pepper.

Add the chicken cubes to the marinade, and mix until the chicken is fully coated. Cover the bowl and refrigerate for at least 30 minutes, or up to overnight.

Preheat your grill to medium-high heat.

Thread the chicken cubes, peppers, and onion wedges onto the soaked skewers, alternating the ingredients as desired.

Brush the skewers with vegetable oil, and season with salt and pepper.

Place the skewers on the grill, and cook for 8-10 minutes, turning occasionally, until the chicken is cooked through and the peppers are slightly charred.

Serve hot with rice or flatbread.

Here's a simple recipe for making a flavorful and healthy vegetable rice dish:

Ingredients:

1)     1 cup white rice

2)     2 cups water

3)     1 tablespoon butter or oil

4)     1 onion, finely chopped

5)     2 cloves garlic, minced

6)     1 cup mixed chopped vegetables of your choice (such as carrots, peas, bell peppers, corn, etc.)

7)     1 teaspoon salt

8)     1/2 teaspoon black pepper

9)     1 teaspoon mixed herbs (such as thyme, basil, oregano, etc.)

10) 1/4 cup chopped fresh parsley or cilantro (optional)

11) Instructions:

 

Rinse the rice in a fine-mesh strainer under cold running water until the water runs clear.

In a medium saucepan, heat the butter or oil over medium heat. Add the onion and garlic, and cook until the onion is translucent, about 3-5 minutes.

Stir in the mixed vegetables, and cook until they are slightly softened, about 5 minutes.

Add the rice to the saucepan, and stir to combine.

Pour in the water, and season with salt, pepper, and mixed herbs. Bring the mixture to a boil.

Reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 18-20 minutes, or until the water is fully absorbed and the rice is tender.

Remove the saucepan from heat, and let it sit covered for 5 minutes.

Fluff the rice with a fork, and stir in the chopped parsley or cilantro, if using.

Serve hot as a side dish, or topped with your favorite protein for a complete meal.
