 Fish Makhaani

Fish Makhaani is a traditional Indian dish made with fish and a rich, creamy tomato-based sauce. Here is a basic recipe:

Ingredients:

1 lb fish (any white fish works well)

2 cups tomatoes, chopped

1 cup heavy cream

1 onion, chopped

2 cloves garlic, minced

2 tsp ginger paste

2 tsp cumin powder

1 tsp coriander powder

1 tsp red chili powder

Salt and pepper to taste

2 tbsp oil

2 tbsp butter

1 tsp cumin seeds

2-3 green chilies, slit

1/4 cup fresh cilantro, chopped

Instructions:

Heat oil and butter in a pan over medium heat. Add cumin seeds and let them crackle.

Add onions and sauté until golden brown. Add garlic and ginger paste and sauté for a minute.

Add tomatoes, cumin powder, coriander powder, red chili powder, salt, and pepper. Cook until the tomatoes are soft and mushy.

Add cream and bring to a simmer. Cook for 2-3 minutes.

Add the fish and green chilies, and cook until the fish is cooked through.

Garnish with cilantro and serve with rice or naan.

Note: You can adjust the spices to your taste.

2.     In a shallow dish, mix together the flour, paprika, garlic powder, salt, and pepper.

3.     In another shallow dish, beat the eggs.

4.     In a third shallow dish, place the breadcrumbs.

5.     Coat each fish fillet in the flour mixture, shaking off any excess.

6.     Dip each floured fillet in the beaten eggs, allowing any excess to drip off.

7.     Finally, coat each fillet in the breadcrumbs, pressing the crumbs onto both sides.

8.     Heat about 1 inch of vegetable oil in a large heavy skillet over medium-high heat until hot.

9.     Place the coated fish fillets in the hot oil and fry for 3-4 minutes on each side, or until golden brown and cooked through.

10.  Remove the fish from the oil with a slotted spatula and place on paper towels to drain any excess oil.
